“With the winter months approaching fast my niece and I co-conspired to come up with this warm and comforting soup using ‘zoodles’ that’s easy on the waistline.”

Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onions
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 5 (14.5 ounce) cans low-sodium chicken broth
  • 1 cup sliced carrots
  • 3/4 pound cooked chicken breast, cut into bite sized pieces
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 pinch dried thyme (optional)
  • salt and ground black pepper to taste
  • 3 zucchini squash, cut into ‘noodles’ using a spiral slicer or vegetable peeler

Directions

  1. Heat olive oil in a large pot over medium-high heat. Saute onion, celery, and garlic in hot oil until just tender, about 5 minutes.
  2. Pour chicken broth into the pot; add carrots, chicken, basil, oregano, thyme, salt, and pepper. Bring the broth to a boil, reduce heat to medium-low, and simmer mixture until the vegetables are tender, about 20 minutes.
  3. Divide zucchini ‘noodles’ between six soup bowls; ladle broth mixture over the ‘noodles.’

“You can make this lean and delicious recipe with your choice of ground turkey or chicken. The mix can also be baked in meatball form: Simply roll it into 30 meatballs and bake 20 to 25 minutes, turning the meatballs once.”

Ingredients

  • 1 onion, quartered
  • 4 cloves garlic, peeled
  • 1 large carrot, quartered
  • 1 celery stalk, quartered
  • 2 1/2 cups baby spinach
  • 1 egg, lightly beaten
  • 1 1/2 pounds lean ground meat (turkey or chicken)
  • 1 1/4 cups quinoa, cooked then cooled
  • 3 tablespoons low-sodium soy sauce
  • 1/2 teaspoon ground black pepper
  • 1/4 cup ketchup or barbecue sauce

Directions

  1. Preheat the oven to 425 degrees F and line a small baking sheet with parchment paper.
  2. Place onion and garlic in a food processor and pulse until finely chopped. Transfer to a large skillet. Add carrot and celery to the food processor, and pulse until chopped. Add spinach and pulse a few times more. Add to the skillet. Place the skillet over medium heat and cook, stirring until vegetables release liquid. Continue cooking until liquid evaporates and vegetables begin to brown, about 8 minutes; add water a tablespoon at a time, if necessary, to keep vegetables from sticking. Transfer to a large bowl.
  3. Add egg, ground meat, quinoa, soy sauce and black pepper to the bowl, and mix gently with your hands. Scrape mixture onto the baking sheet and form into a loaf approximately 4 inches wide and 10 inches long; wet your hands if the mixture is very sticky. Spread top of loaf with ketchup or barbecue sauce. Bake until cooked through and browned, about 40 minutes. Cool 5 minutes before slicing.

Ingredients

  • 1 pound new potatoes, halved
  • 1/2 large rutabaga, peeled and cubed
  • 1 large sweet potato, peeled and cubed
  • 2 large parsnips, peeled and cubed
  • 2 large carrots, peeled and cubed
  • 3 tablespoons olive oil
  • 3 tablespoons sweet red chili sauce
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • 1 tablespoon steak seasoning
  • 1 teaspoon ground black pepper

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Toss potatoes, rutabaga, sweet potato, parsnips, and carrots with olive oil and chili sauce in a large bowl until coated. Season with onion powder, garlic powder, grill seasoning, and pepper. Toss again until evenly coated, then spread vegetables into a 9×13 inch roasting pan.
  3. Roast vegetables in preheated oven for 20 minutes, then stir, return to oven, and continue cooking until the vegetables are tender, about 20 minutes more.

Fast and Friendly Meatballs

“These oven-baked meatballs are fast and easy to prepare and very kid-friendly. You can serve them with pasta and spaghetti sauce or just eat them with ketchup, as my children do. Feel free to substitute lean ground beef for the ground turkey. The turkey should have at least 7% fat.”

Ingredients

  • 2 tablespoons olive oil
  • 1 (20 ounce) package ground turkey
  • 1 egg, beaten
  • 1/3 cup Italian seasoned bread crumbs

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish with the olive oil, and place it in the oven while preheating.
  2. In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
  3. Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you’d like.

“This is a great and easy way to add flavor to pork chops, and it is always a hit at family gatherings. Just take a few minutes to make the marinade and let it sit for several hours. If cooking in the oven, set at 350 degrees F and cook for 30 minutes, or until done.”

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon garlic powder
  • 6 boneless pork chops

Directions

  1. In a bowl, mix the soy sauce, brown sugar, lemon juice, vegetable oil, ginger, and garlic powder. Set aside some of the mixture in a separate bowl for marinating during cooking. Pierce the pork chops on both sides with a fork, place in a large resealable plastic bag, and cover with the remaining marinade mixture. Refrigerate 6 to 8 hours.
  2. Preheat the grill for high heat.
  3. Lightly oil the grill grate. Discard marinade, and grill pork chops 6 to 8 minutes per side, or to desired doneness, marinating often with the reserved portion of the marinade.

Ingredients

  • 4 portobello mushroom caps
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 shallot, thinly sliced
  • 1 cup white wine

Directions

  1. Preheat grill for high heat.
  2. Place mushrooms onto the grill, smooth side up. Grill until they start to soften, about 10 minutes. Turn over, and grill on the other side for about 5 minutes.
  3. Meanwhile, heat olive oil and butter in a large skillet over medium heat. Add the shallot, and fry for a few minutes, stirring frequently.
  4. Remove mushrooms to a cutting board, and slice. Place into the skillet, and increase the heat to high. Cook for about a minute, then pour in the wine. Continue to cook and stir until the wine is nearly evaporated. Remove from heat, and serve.

  1. Combine the rice with the garlic in a large saucepan. Pour water and salsa into the rice mixture. Bring the water to a full boil and then reduce the temperature to simmer. Simmer for 20 minutes or until the rice is tender. Fluff the rice when finished.

  • 1 (6 pound) bone-in turkey breast

  1. Rinse the turkey breast and pat dry. Cut off any excess skin, but leave the skin covering the breast. Rub onion soup mix all over outside of the turkey and under the skin. Place in a slow cooker. Cover, and cook on High for 1 hour, then set to Low, and cook for 7 hours.

  • 1 (16 ounce) jar salsa
  • 1 (1.25 ounce) package dry taco seasoning mix
  • 1 lime, juiced
  • 3 tablespoons chopped fresh cilantro
  • 3 pounds skinless, boneless chicken breast halves

Directions

  1. Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

Ingredients

  • 1 tablespoon vegetable oil
  • 3 1/2 pounds beef chuck pot roast
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 1/4 cup butter
  • 1 teaspoon dried rosemary

Directions

  1. Preheat the oven to 275 degrees F (135 degrees C).
  2. Pour vegetable oil into a large oven-safe pot over medium-high heat. Season the chuck roast with salt and black pepper. Brown the meat on both sides in the hot oil, and transfer to a plate.
  3. Stir carrots, celery, and onion into the pot, and cook and stir until vegetables start to release their juices, about 3 minutes; loosen any brown flavor bits on the bottom of the pot. Add butter, and cook until the onions are translucent, about 5 minutes. Then sprinkle in rosemary, stir the vegetables, and return the roast to the pot. Cover the pot with a lid.
  4. Roast in the preheated oven until the chuck roast is tender, about 2 1/2 to 3 hours. Season vegetables with additional salt and black pepper, if desired.

  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 pinch salt
  • 3 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon white sugar
  • 12 thick slices bread

Directions

  1. Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

  • 4 tablespoons water
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon honey
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon ground ginger
  • 1 tablespoon vegetable oil
  • 1/4 cup sliced green onions
  • 4 cloves garlic, minced
  • 12 ounces cooked shrimp, tails removed

Directions

  1. In a bowl, stir together water, ketchup, soy sauce, cornstarch, honey, crushed red pepper, and ground ginger. Set aside.
  2. Heat oil in a large skillet over medium-high heat. Stir in green onions and garlic; cook 30 seconds. Stir in shrimp, and toss to coat with oil. Stir in sauce. Cook and stir until sauce is bubbly and thickened.

  • 6 skinless, boneless chicken breast halves

  • 1/2 teaspoon dried parsley

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9×13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
  3. Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.

Ingredients

  • 5 (4 ounce) skinless, boneless chicken breast halves – cut into 1 inch strips
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano
  • 3 tablespoons lemon juice
  • 3 tablespoons Worcestershire sauce
  • 1/4 cup white wine

Directions

  1. Combine chicken with ground pepper, cheese, parsley, garlic, salt, oregano, lemon juice, Worcestershire sauce and wine in a shallow bowl. Marinate in the refrigerator for several hours (overnight is best).
  2. Preheat broiler. Remove chicken from marinade (save marinade) and place in a shallow pan. Broil 8 inches from heat, turning once, until chicken is no longer pink inside (about 15 minutes).
  3. In a small saucepan, bring marinade to a boil. Pour over chicken, toss and serve. Yummy!

Ingredients

  • 2 (1 pound) pork tenderloins
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup barbeque sauce

Directions

  1. Prepare grill for indirect heat.
  2. Season meat with garlic powder, salt, and pepper.
  3. Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.
  4. Brush tenderloin with barbeque sauce. Continue cooking for 15 minutes, or until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C). Allow pork to rest for 10 minutes. Slice pork, and serve with additional barbeque sauce for dipping.

Ingredients

  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sherry
  • 1 tablespoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 8 skinless, boneless chicken breast halves – cut into 2 inch pieces
  • 1 (20 ounce) can pineapple chunks, drained
  • skewers

Directions

  1. In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
  2. Preheat grill to medium-high heat.
  3. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.

“The flesh of spaghetti squash comes out in long strands, very much resembling the noodles for which it is named. In this recipe, the ‘noodles’ are tossed with vegetables and feta cheese. You can substitute different vegetables, but be sure to use ones that have contrasting colors.”

Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups chopped tomatoes
  • 3/4 cup crumbled feta cheese
  • 3 tablespoons sliced black olives
  • 2 tablespoons chopped fresh basil

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  2. Place spaghetti squash with cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven and set aside to cool enough to be easily handled.
  3. Meanwhile, heat oil in a skillet over medium heat. Cook and stir onion in oil until tender. Add garlic; cook and stir until fragrant, 2 to 3 minutes. Stir in tomatoes and cook until tomatoes are warmed through.
  4. Use a large spoon to scoop the stringy pulp from the squash and place in a medium bowl. Toss with the vegetables, feta cheese, olives, and basil. Serve warm.

Ingredients

  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1 teaspoon dried oregano
  • 3 cloves garlic, crushed
  • 4 pounds pork tenderloin, cut into 1 inch cubes
  • 2 medium yellow onions, cut into 1 inch pieces
  • 2 green bell peppers, cut into 1 inch pieces
  • skewers

Directions

  1. In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
  2. Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
  3. Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
